Steps to make Egg Potato Curry:
- Boil eggs
- De shell eggs n make one or two cut in eggs in opposite sides.. .. This process help to absorb spices into egg.
- Cut potatoes into cubes not very small in size, wash them.
- Take a heavy bottom woke, heat two tbs oil, Now fry cubes potatoes till light brown. Keep aside.
- Now fry eggs.. Sprinkle lil bit salt.. till light brown, keep aside.
- Now add remaining two tbs oil.. Heat, temper one Bay leaf, add onion, garlic, ginger paste, fry for two in high flame, add tomato paste.. Stir continuously.. B careful.. Should not burn.
- Add all dry spices except garam masala.. Fry till spices start to release oil.
- Add fried potatoes, mix well, add one glass water, do flame medium. Cook with lid till potatoes gets tender.
- Open the lid.. Add eggs, if u need more gravy add half cup water, cook for five-minute.
- Now off gas oven. Sprinkle garam masala, cover the lid. Keep it for five-minute.
- Open lid.. Sprinkle cilantro.
- Serve with hot steamed rice or bread.
