- Prepare 1/4 tsp celery salt( optional, I added this )
While the kielbasa and root vegetables are cooking, prepare the apple-thyme gastrique. Combine the sugar, vinegar, apple, thyme and sea salt in a medium sauce pot. My life, it seems, and kitchen are running on these quick and easy meals lately. Mix all ingredients in a large bowl.

- preheat oven to 400°F. divide sweet potatoes, onion and carrots between 2 greased 15x10x1 inch baking pans. drizzle with oil; toss to cost. roast 25 minutes, stirring occasionally.
- add kielbasa or sausage, squash, zucchini, and tomatoes to pans ; sprinkle with salts and pepper. roast another 15 ~ to 20 minutes longer or until vegetables are tender. transfer to a serving bowl; toss to combine. if desired serve with mustard.
Remove with a slotted spoon and keep warm. Add the vegetables, broth and soup mix to skillet. Combine cornstarch and water until smooth; stir into sausage.
