This recipe is based on the south Indian green mango chutney, also called "mango pachadi", with my own twist. The ingredients needed to make Green Chutney Rice:
- Get 1 Onion
- Take 4-5 Florals of Cauliflower
- Prepare 1 Capsicum
- Take 8-10 French Beans
- Make ready 1/2 bowl Peas
- Make ready 2 Carrots
- Take 250 gm Rice
- Make ready 100 gm Coriander leaves
- Make ready 2 Green chillies
- Get 1 tsp Red Chilli powder
- Prepare 1 tsp kitchen king
- Get 4-5 Garlic florals
- Get 1 Bay leaf
- Get 1 tsp cumin seeds
- Take 2 tsp lemon juice
- Prepare as needed Oil
- Take to taste Salt
- Get as needed Water
Directions: Take grated coconut, ginger, garlic, green chillies, roasted peanuts and salt in a small chutney jar of a food processor or grinder. Grind them together until medium coarse texture. The sautéed green chillies, curry leaves, chana dal and shredded coconut crushed with coriander leaves and lemon juice gives it an irresistible taste and texture. Pair it up with Indian meal or snacks like pakora and gathiya and turn them in sizzling hot food.
Steps to make Green Chutney Rice:
- Wash all the above mentioned vegetables and cut them into pieces as shown.
- Take the rice in a bowl and wash it twice. After washing it, soak it in water for about 20 minutes.
- For the chutney, wash the coriander leaves and cut it into pieces. Put it in a mixi jar. Now add green chilli, garlic florals, 2 tspn lemon juice and salt as per taste. Grind them to a fine paste and use water accordingly.
- Take another container. Add 6-7 glasses of water to it and bring it to boil. Now add a tspn of oil and half tspn of salt to it. Now strain the water from the rice and pour the rice in the boiling water. Stir & Cook until the rice is properly cooked. Strain the water and let the rice cool down for about 10 minutes.
- In a pan add 2-4 tspn of oil or ghee. Add bay leaf, green chilli and cumin seeds. Further add all the veggies and fry them until they are well cooked.
- Now after the veggies are cooked, add red chilli powder, kitchen king and stir well. Add some water so that the spices are mixed well.
- Further add the green chutney and cook for a couple of minutes.
- Lastly, add the rice and salt to the veggies and give them a good mix. Cook for 2-3 minutes until they are properly mixed.
