  12. Get 1/2 teaspoon Cumin Seeds
  13. Prepare 1/2 tablespoon Ginger-Garlic Paste
  14. Make ready 2 medium Onions, finely chopped
  15. Prepare 1 teaspoon Coriander Powder
  16. Make ready 1/2 teaspoon Red Chilli Powder
  17. Make ready 1/2 teaspoon Garam Masala Powder
  18. Take 3/4 cup Water
  19. Get 2 tablespoons Oil
  20. Get to taste Salt

Lauki is a kind of vegetable that most of the people don't like its taste but when making kofta of Lauki, dudhi halwa, and make Lauki- chana dal, it's very tasty and delicious. Make the kofta: Process the seeds or nuts until a coarse meal forms. Add potato and process until coarse. Add the rest of the ingredients and pulse until most of the chickpeas have broken down. (Without processor, use nut or seed flour and grated potato.

Instructions to make GHEEYA KOFTA(with rice flour):
  1. Peel and grate Gheeya.Squeeze out the water completely and keep that water for making gravy.
  2. Take squeezed grated gheeya in a large bowl. Add rice flour, turmeric powder, ginger-garlic paste, finely chopped green chilli, finely chopped onion and salt.
  3. Mix all ingredients well. Mixture should have a thick consistency to make round shaped balls. If it is watery then add 1-2 teaspoons Rice flour and mix. Do not keep this mixture idle for long time since Gheeya releases water over time and it will make mixture soggy and you will not be able to make kofta balls.
  4. Grease your palms with oil and divide mixture into 10 to 12 portions. Take each portion and turn it into round shaped balls
  5. Heat oil in a frying pan over medium flame for deep frying. When oil is medium hot, add 3-4 balls at a time. Stir occasionally and deep-fry until they turn light golden brown and crisp. Take them out using slotted spoon, drain excess oil and place them over kitchen tissue in a plate.
  6. Method for Gravy:Heat 2-tablespoons oil in saucepan over medium flame. Add cumin seeds and cook until they sizzle, 7-10 seconds. Add ginger-garlic paste and stir-fry for 30-40 seconds. Add chopped onion and stir-fry until it turns light pink in colour.
  7. Add tomato puree and mix well. Stir-fry for 3-4 minutes
  8. Add red chilli powder, coriander powder, garam masala powder, turmeric powder and salt (add for gravy). Mix well and stir-fry for a minute.
  9. Add  water 1/2-cup water and cook over medium flame for 3-4 minutes. Stir in between occasionally
  10. Add fried rice flour kofta balls to the gravy.
  11. Cook for 5-6 minutes and turn off flame. Transfer it to a serving bowl and garnish with coriander leaves.

For making Lauki Kofta Curry recipe, Lauki or bottle gourd is grated and mixed with spices and besan (gram flour). This dough for lauki kofta is then made into small balls which are then deep fried to make lauki koftas. The lauki kofta is golden brown from outside and soft from inside.
