In most homes paniyaram are usually made with left over or over fermented Idli or dosa batter. These are known by different names paddu, gundu pongala, gunta ponganalu, guliyappa and masala paniyaram. Fill the cavities/holes with the sooji batter. When the sides start to leave, flip it over to the other side using a spoon.
Steps to make Millet,rice flour and daal PANIYARAM/ APPE:
- Wash and soak rice, little millets and moong daal overnight.
- Grind them with green chilli and ginger. Prepare a smooth batter.
- Add salt, All the chopped vegetables- onion, capsicum, carrot and green coriander and Eno to it. Mix properly.
- Now heat 1 tbsp oil in a small pan. Put mustard seeds in it,let them crackle, now add curry leaves. Stir and pour in the batter.
- Grease appe pan(a special pan to make appe). Pour batter in each cavity and cover with the lid.
- Cook them from both sides till golden brown and crisp.
- Millet,rice and daal PANIYARAMS are ready.
- Serve these cut, fluffy and delicious paniyarams with coconut chutney. You can use tomato chutney or mint chutney too but it tastes best with coconut chutney.

Cook on low heat until it browns. Adjust the consistency by mixing in a few tsps of rice flour / wheat flour. Instead of doing this sweet appams by soaking rice, you can directly do it with wheat flour or rice flour. Just grind coconut ,jaggery n elaichi. Sweet appam made from wheat flour would be more soft.
