A whole turkey is certainly too much for two people, but a bone-in, skin-on turkey breast is a great option.   2. Heat a little bit of oil in a pan and put the turkey breast into it. Cook on both sides for about 3-5 min then lower the hear and pour the vegetable stock in the pan. I used the same batch of stock that I made for the risotto from last week (you can find it in my previous recipe).
  3. Cook for about 20 more minutes. In the meantime cook the sliced zucchini in a separate greased pan on medium heat for about 15 minutes (half on each side). After about 10 minutes add salt and pepper (I also add dried basil to really bring out the aroma). Also in the meantime bring about 1 L of salted water to boiling.
  4. When the stock evaporates to approximately half of the initial volume, add a tablespoon of breadcrumbs to make a delicious sauce. Leave for about 5 mins before serving. In the meantime put the cheese ravioli into the boiling water. Stir and after 2 min take them out of the water. Serve as soon as possible so the ravioli don’t dry out.

Take a detour from roasted turkey altogether and serve individual game hens this Thanksgiving. Halve the recipe to make two, one for you and one for your dinner companion.
