Muthia dhokla traditionally is made from combination of boiled rice and five different flours: gram flour (besan), wheat flour (gehun ka atta), maize flour (makai ka atta), white millet flour (jowar/juar) and black millet flour (bajra).   4. Take small vessel pour 1and 1/2 cup batter as per the size of the plate add 1tsp oil 1/2 tsp spoon of soda bicarbonate 2tbs warm water mix well
  5. With the help of spoon or hand batter will become bubbly and then pour the batter in plate cover with lid and steam them for 15 to 20 minutes check with knife after 15 minutes by inserting it inside dhokla. If the knife comes out clean remove it from gas. Allow dish to cool and then cut into pieces.
  6. For tempering heat oil in pan add mustard seeds cummin seeds hing let the mustard seeds crackel.
  7. When the mustard seeds finish crackling, add 1 to 2 teaspoons sesame seeds and hing and give a stir. and then add onion green chilli curry leaves.
  8. Saute onions and mix the dhokla with it garnish with coriander leaves and serve with garlic chutney…. for chutney take some garlic cloves add red chilli powder salt and water and grind well.

But due to time constraints and to make process a little easy, I simply dry roast them in a pan and then make flour using a grinder. Besan Dhokla is a popular & delicious Gujarati (vegetarian) snack.
